Quinoa (pronouned KEEN-wa) is considered a 'superfood', packed full of goodness, so it's good to get your little one acquainted to quinoa from a young age. The mild tastes of grains makes this little dish an excellent choice for getting baby off to a healthy start. This is great exposure to a different texture of food, but if bubs prefers a smoother consistency, pop it in a blender with a little extra liquid.
INGREDIENTS:
- 1 cup (250 mL) low salt vegetable stock or water
- 1/2 cup (125 mL) quinoa
- 1/2 cup (125 mL) grated carrots
- 1/2 cup (125 mL) finely chopped celery
- 1/4 cup (60 mL) grated courgettes
- 2 tsp (10 mL) olive oil
In saucepan, bring stock to boil over medium-high heat. Stir in quinoa, carrot and celery and boil. Reduce heat to low; cover and simmer until no liquid is left (about 15 minutes).
Remove from heat. Stir in courgettes; cover and let stand until quinoa and vegetables are softened (about 10 minutes).
Add oil and mix. Serve warm or at room temperature. (Make-ahead:last up to 3 days in an airtight container in fridge)
